A lovely popular herb, this spearmint grows very vigorously and is best in pots. The plant prefers partial shade, but can flourish in most conditions. Spearmints best suited to loamy soils with abundant organic material. The leaves can be used fresh, dried, or frozen. They can also be preserved in salt, sugar, sugar syrup, alcohol, or oil. Of course it is best loved for the sauce made with it to accompany lamb.
